Amethyst Acanthus: Laguiole Knife in Purple Elder Burl – Chiseled Bee – Chiseled Spring

789€

“Amethyst Acanthus” exists in a single example, and every part of it was shaped by hand by one cutler working at Laguiole en Aubrac. The elder burl handle, stabilized and then dyed, glows a deep amethyst that ripples between pale mauve and an inky, almost black plum, broken here and there by golden-brown streaks where the grain grows tighter. Its color looks cloudy and fluid, like a polished stone in which nobody could point to where the violet starts or stops. A pair of satin stainless steel bolsters frame it plainly and leave the brilliance to the wood and to the chiseled spring.

The spring holds the bulk of the craftsmanship. Two motifs take turns down its whole length: acanthus leaves chiseled in relief, each lobe scored with fine parallel veins before it rolls into a scroll, and cartouches with a matte, stippled ground, ringed by polished, wavy borders. Tiny spirals tie every element to its neighbor, so the decoration carries on unbroken along the entire back.

Alternating the two motifs means handling two separate surface finishes, a different tool and a different series of passes for each: deep stippling inside the cartouches, bright polish on the scrolls and their fine edging, across a strip of steel no wider than a few millimeters, with no chance to rework anything. The bee uses precisely the same vocabulary. Its wide wings share the stippling of the cartouches and are trimmed with a polished rim, while its body is ribbed at even intervals like the veins of the leaves. Everything links up, the spring flowing straight into the bee at the head.

Collectors who prize chiseling brought to a rare degree of finish will find it here. Shimmering violet elder burl, acanthus and stippled cartouches along the spring, and a bee that speaks their language come together in a closely knit design that pleases the eye and sits just as happily in the hand.

Created in 1829 in the small village of Laguiole for local farmers, this knife has risen to become one of the most celebrated in France, distinguished by its emblematic bee, a symbol of prestige and quality.

Laguiole en Aubrac Knife in Purple Elder Burl

Chiseling is taken to a rare level of finish on this Laguiole. The handle in purple elder burl shimmers with a deep, moiré amethyst, from pale mauve to almost black plum, with golden-brown passages running through it. Two deliberately sober satin stainless steel bolsters close it at either end.

The spring alternates acanthus leaves in relief, with finely veined lobes, and cartouches on a matte stippled ground inside polished borders. The bee repeats that vocabulary: broad wings stippled the same way and trimmed in polish, and a body marked with even ribs.

"Amethyst Acanthus" is one ornament traveling the length of the knife, from violet wood to bee. This marriage of color and chiseling exists once and will not be made again. If you collect what is rarely seen, this is the moment to act.

Deep amethyst shading into mauve and dark plum, the dyed elder burl is cut through with flickers of golden brown where its fibers tighten. Along the spring, curling acanthus leaves with finely scored lobes trade places with sand-matte cartouches inside polished, wavy frames. Up at the head, the bee wears the same stippling on its broad wings, rimmed in bright steel, over a body ribbed like the veins of a leaf.

Violet hardly ever appears on a knife, and this particular shade has no equal. The elder burl spreads a dense amethyst across the handle, rippled like moiré silk, sliding from soft mauve to nearly black plum as the piece turns, with glimpses of golden brown wherever the fibers draw together. It looks more like a gemstone than a wood, something deep and mineral that the eye sinks into without finding the floor. Held between two satin bolsters left bare on purpose, that color becomes a prepared canvas, ready for the motif to be laid on it.

Against this background, the ornamentist has spread out an entire repertoire. Down the spring, acanthus leaves curl back into scrolls, each lobe lined with veins so fine that only a low, grazing light lets you count them, and between them sit cartouches whose stippled ground is as matte as sand, edged by polished borders that undulate. Two textures, two tools, and two series of passes trade places on a band a few millimeters wide, with no second chance from the first curl to the last. A back like this takes time.

The bee at the top is no exception, made by the same hand and in the same idiom. Its broad wings repeat the exact stippling of the cartouches, edged with a polished line just like the borders below, and the regular ribs of its body echo the veining of the acanthus. Nothing is tacked on and nothing sticks out, so the whole knife seems to have been crossed by one continuous motif. Taken in one look, wood, spring, and insect tell a single story: an acanthus leaf climbing the steel until, at the summit, it settles in the shape of a bee.

Purple Elder Burl

Elder burl develops on knotty growths along the trunk, where the fibers contract and wind around themselves rather than growing in a straight line. That natural chaos creates a crowded, unpredictable pattern of whorls and tightly packed little knots, and stabilization sets it deep into the wood before any dye is applied.

Once dyed violet, the burl reveals a surprising depth: a moiré amethyst, light mauve in one place and near-black plum in another depending on the angle, while the tightest areas of the grain absorb the dye differently and let golden-brown passages show. No two handles ever carry the same figure, and this color, so seldom seen in knifemaking, is what gives "Amethyst Acanthus" its whole character.

A violet handle of this depth and a spring chiseled with alternating acanthus and cartouches come together in this single knife and nowhere else. There will be only one opportunity to own it.
