Hand-Chiseled Double-Plate Laguiole Knives

Hand-chiseled double-plate Laguiole knives are handcrafted in France by Laguiole en Aubrac, which ranks them as its most elaborate work, ahead of even its Damascus blades. Along the handle, the metal plates are doubled and chiseled by hand into a fine pattern that flashes as you tilt the knife. If you’re after nice pocket knives that get noticed, this is the kind friends ask to hold when they spot one on your desk.

An elegant pocket knife starts with that metalwork, and the handle sets the mood. Larimar brings a Caribbean blue, mammoth molar shows the ridges of a fossil tooth in blue or a tiger-striped brown, and pistachio wood gives you a warm, natural grain. Go for a single blade, or for a model that tucks a corkscrew into the same handle. Hand-cut detail is what makes a decorative pocket knife worth showing off, and each knife in this collection has it.

What double plates add to a Laguiole

Picture a slim Laguiole handle, then add a second layer of metal along it, chiseled by hand into a decorative pattern. That ribbon of handwork is what sets these knives apart, and it turns an everyday tool into an ornate pocket knife without changing the slender Laguiole outline. In the Laguiole en Aubrac catalog, no other construction asks for as much work. You notice it as soon as you hold one: the detail is there to see, and you can trace it with a fingertip.

Larimar, mammoth molar or pistachio wood

Larimar is a sea-blue stone patterned with pale swirls, finished here to a high, glassy shine. Mammoth molar is cut from the fossil teeth of mammoths, and on these knives it's offered in blue or a tiger-striped brown, finished satin to show off its banding. Pistachio wood is the warm option, golden with darker streaks, also satin-finished. If you want a dress pocket knife for the office or an evening out, the stone and the molar draw the eye, while pistachio stays understated. The slim Laguiole outline slips easily into dress pants. Natural handles all differ, so yours will carry its own markings.

Choosing your double-plate Laguiole

Start with the handle, since all of them carry the chiseled plates. Then think about a corkscrew. A single blade keeps the profile lean, and with a corkscrew model you can open the wine at dinner too. As for the finish, stone and horn get a high polish, while many woods and the mammoth molar are satin. Whichever you choose, it's handmade in France by Laguiole en Aubrac, and the blade bears Laguiole en Aubrac's name. Laguiole names a style of knife, not a single maker, which is why the name on this blade matters. To learn how the technique works, read Laguiole Double-Plates Knives.

Double-plate Laguiole questions

What makes a good pocket knife?

A good pocket knife is one you'll want to carry and use for a very long time. Who made it, what it's made of and how much handwork went into it all count. These knives are handmade in France by Laguiole en Aubrac. Their double plates, chiseled by hand, are the maker's most elaborate construction, and the handles come in stone, fossil molar, horn or wood.

What is larimar?

Larimar is a blue variety of the mineral pectolite, found in only one place in the world: the mountains of the Dominican Republic, in the Caribbean. Its pale blue to sea-green color, swirled with white, often brings to mind sunlight on shallow water. On a double-plate Laguiole, larimar becomes a glossy stone handle framed by hand-chiseled plates.

What does a mammoth tooth look like?

A mammoth molar is a flat-topped grinding tooth built from many thin layers of enamel, so a cut slice shows wavy ridges running across its surface. Most mammoths died out as the last Ice Age ended, and their teeth still turn up in the frozen ground of Alaska and Siberia. On these Laguiole knives, you see those ridges across a satin handle, in blue or a tiger-stripe brown.

Each knife comes with a care guide: hand-wash it, towel it dry and never put it near a dishwasher.
