Laguiole Collector Knives: Signature & Marquetry
Laguiole collector knives are handmade in France by Laguiole en Aubrac, and on each one the handle is the showpiece. Some have marquetry handles in contrasting materials, others are topped with a sculpted butterfly, fleur-de-lis or bunch of grapes, and a few pair black ebony with a polished stone. These are collectible knives you’ll keep on the desk rather than in a drawer, and every one still opens and cuts like the working Laguiole it is.
With collectors knives, trust your eye: start with the one you keep coming back to. Checkerboard and striped marquetry suit anyone drawn to pattern, while the Butterfly pieces bring color and each Cosmos model has its own emblem, Saturn’s rings among them. If symbolism matters to you, look first at the fleur-de-lis and Masonic designs. In the end, choosing among these collectible pocket knives comes down to one question: which design do you want in your hand?

Laguiole Prestige Knife with ‘Fleur de Lys’ in Snakewood Handle

Butterfly, fleur-de-lis or square and compass: the Signature emblems
On the Signature pieces, a sculpted emblem crowns the handle. The Butterfly collection sets a butterfly chiseled in relief against stabilized wood in green, coral red, yellow or blue. You'll find a fleur-de-lis atop a snakewood handle and a sculpted bunch of grapes, and the Prestige models add chiseled plates. For Freemasons there is the Masonic knife, crowned with the square and compass, on black ebony or on a checkerboard handle. Every emblem is chiseled in fine detail, so it looks like a tiny sculpture when you turn the knife in your fingers.

Marquetry handles: checkerboards, stripes and mosaics
Marquetry means fitting pieces of wood, and sometimes other materials, together to form a pattern, and Laguiole en Aubrac uses it in several ways. Checkerboard handles alternate two contrasting materials in neat squares. Bicolor handles set thin strips of wood, dyed all the way through, on the diagonal for bold stripes in pink, brown, blue-green or green with violet glints. Then come the mosaics. Orgue lines up colored segments like organ pipes or piano keys. Étincelle crosses long light and dark strips with small colored squares. Woodstock is a patchwork of mixed woods. Whichever you choose, you can't feel a single seam under your fingertips. To see how the technique works, read Marquetry in Artisanal Knife-making.
Ebony and stone, spiral handles and fuller shapes
The Nox Pretiosa pieces join black ebony and a polished stone in one handle, with finely chiseled plates, so your thumb moves from warm wood to cool mineral. Other designs play with form: the Crocus and Dodu models have a rounder, fuller handle, and the twisted handles are carved into a spiral out of a single solid piece. Any of them makes a strong first piece or a standout addition to a knife collection. For the full story of the ebony and stone pieces, see Nox Pretiosa Collection.
Collector knife questions
What does the fleur-de-lis mean?
The fleur-de-lis is a stylized lily, used for centuries as an emblem of the French monarchy and still closely tied to France. In the United States it's also the symbol of New Orleans, a nod to the city's French roots. Laguiole en Aubrac uses it on two kinds of collector knives: as a sculpted emblem above a snakewood handle, and as an inlay of pewter set into black ebony.
What is marquetry?
Marquetry is decorative work in which thin pieces of wood, and sometimes other materials, are cut and fitted together to form a pattern or a picture. Cabinetmakers have used it on fine furniture for centuries. On these Laguiole knives the pattern is built into the handle itself, as a checkerboard, diagonal stripes or a mosaic of colored woods, finished so smoothly that the surface feels like one piece.
What is ebony wood?
Ebony is a dense, very dark hardwood that comes from several tropical trees. Its fine grain takes a high polish, which is why it has long been chosen for piano keys, chess pieces and guitar fingerboards. On these knives it appears on its own, in checkerboard marquetry, and next to polished stone in the Nox Pretiosa pieces, where its deep black makes the stone glow.
Your knife arrives with care tips. Wash it by hand only, dry it right away, and don't ever send it through the dishwasher.
