This Laguiole knife is carefully crafted in the Laguiole en Aubrac workshops. It features a 12 cm handle made of green Cheesewood, a rare material selected for its smooth texture and vivid pistachio tone. Each detail reflects the precision of traditional French cutlery.
- Handle: 12 cm – Colored Coarl Cheesewood. Satin finish.
- Shepherd’s cross on the left side of the handle.
- Blade: 11 cm – Stainless steel (Sandvik 12C27MOD), satin finish.
- Forged bee. Guilloché back spring.

Cheesewood (Alstonia congensis) is a tropical wood species native to Central and West Africa, valued for its fine grain and uniform structure. Naturally light in color, it is most often enhanced through coloring processes that bring out its full visual potential.
For this model, the Cheesewood has been tinted in a soft coral orange shade, highlighting its smooth surface and natural elegance. This wood is particularly suited for knife handles due to its stability, lightness, and the excellent finish it allows.
